As promised in my Porkapalooza V invite, I have been experimenting with making homemade sausage. Today I made Spicy Chipotle and Cheese sausages and smoked them on my cabinet smoker for a few hours. They were very good! Tender, tasty and fresh!
Hopefully with this success I can start to make sausage more often. It’s a great use of the meat grinder and sausage stuffer Amanda got me for Christmas.
- Mix Together Sausage Seasonings (in this case Chipotle peppers, garlic, onion, parsley, romano cheese, pepper, paprika)
- Cut 3-5 pound pork shoulder into 1 inch thick pieces
- Cut meat into 1 inch cubes and freeze for 30 minutes
- Grind meat into bowl with seasonings
- Mix everything together thoroughly
- Run through meat grinder a second time
- Beautiful Sausage filling
- Run water through natural casings after soaking for 30-45 minutes
- Tie off end of casing and start stuffing!
- Wrap around in a circle and start making links
- Twist off links in 5 inch increments, alternate direction of twisting with each link
- Smoke on indirect heat for 1-3 hours until a pink smoke ring forms and sausage is cooked thoroughly. Finish in the oven if needed.
- Enjoy the beautiful sausage!
